  1. Add a splash of veg oil to a large pan on medium-high heat. Throw in the potatoes and fry them for 5 minutes until they're caramelized and half-cooked. Remove the potatoes to a plate and set aside.

  8. In a small bowl, beat the egg with a tbsp water. Brush the egg wash onto the pastry. Bake the pie in a 400 F oven for 20 to 25 minutes, or until the crust is puffed and golden. Serve hot.
